Pita bread pizzas

You can make pita breads into lots of thin, healthy pizza bases. By toasting them first, they become easy to split in two. Top them with your favourite toppings and cheese, then bake to melt the cheese and get a thin, crispy base.

  • 8 wholemeal pita bread pockets
  • Tomato sauce or relish
  • 2 cups grated Edam cheese
  • Pizza toppings: tomatoes, mushrooms, ham, pepperoni, spinach, jalapenos, pineapple, olives and more!

  1. Briefly toast the pita pockets in a toaster (this will allow you to split them open more easily). Open up so you have 16 halves.     
  2. Place pita halves on a baking tray with inside facing up.
  3. Smear pitas with tomato sauce or relish.     
  4. Sprinkle with a little grated cheese.
  5. Layer your favourite pizza toppings on top - tomatoes, mushrooms, ham, pepperoni, spinach, jalapenos, pineapple, olives... the possibilities are endless!
  6. Grill in hot oven until cheese is melted and golden.
  7. For an interesting twist, try basil pesto instead of tomato sauce.
