Mixed Berry Summer Pudding
This summer pudding is packed full of delicious berries!

- ¼ cup Pams White Sugar
- 2 tablespoons water
- 250g Pams Mixed Berries
- 4 slices white toast bread, crusts removed

- Place sugar, water and frozen berries in a small saucepan, stir until sugar has dissolved and the fruit has thawed but the fruit pieces are still whole.
- Line the bottom and sides of a high sided bowl (about 500ml capacity) with the slices of bread, reserving some for the top.
- Add the berries in the syrup and cover with the remaining bread. Lightly press the bread down with a plate, weigh the plate down and cool the pudding in the refrigerator overnight or for approximately 4 hours.
